You guys...
I have become OBSESSED with fresh homemade whipped cream and berries as a dessert.
Now, I know what you're thinking: "whipped cream is full of sugar, and fat and all things bad"
Well, I feel like, if you're going to indulge, indulge. But you can make it a smart indulgence.
In my former life, indulgence meant eating an entire tub of canned frosting, an entire sleeve of girl scout cookies, an entire... Well... You get the picture. Now, it's a reasonably sized portion of fresh whipped cream, and as many berries and I can dip in that portion.
I make my whipped cream with three ingredients : heavy cream (unfortunately, I've found all the lower fat alternatives to be sub par), vanilla paste, and splenda. So there's no added sugar. I load it all up into the siphon, and out comes magical tasty dessert.
Now if you'll excuse me, it's cherry season, and well, these cherries with fresh whip ain't gunna eat itself my friends!
New beginings
So, here goes again....
I'm Rachel. I'm bad at blogs. I'm apparently good at losing weight. Kind of. I have to remain focused.
Here's the progress I've made until now:
The left is me about 11 months ago. The right is in November. I haven't really lost much more since November thanks to a lack of focus, a surplus of beer drinking, and a lot of other things that just boils down to excuses.
Here's how it happened: a year ago, I got a new job. And with that new job, came shiny new insurance. So off to the doctor I went, hoping to leave with a plan to have a baby. Instead i left with a diagnosis of Type 2 Diabetes, Hypothyroidism, and an appointment with a Nutritionist. If you want to lose weight, and you've never seen a nutritionist, find the time and money to do so. Without her, none of my progress would have been possible, because without her, I never would have gotten my mind right. I completely changed the way I eat. And that's how I lost 60 pounds. I didn't even exercise. Just straight calorie management.
I added in running, and took that as an excuse to eat whatever I want. But you can't out run a bad diet. You just can't.
I've since gained back about 10. and that stops now.
I'm training for a 10k. And getting eating back on track. Hopefully, once the focus comes back the next 60 pounds will fall off as easily as the last did.
